Take a journey to the beautiful Caribbean with renowned eco-lifestyle chef and part of the Preserving Now's team, Chef Curtis Ross, as he teaches healthy living foods with an island flair.

With origins from Trinidad, Chef Curtis Ross draws from his own distinct ethnic influences of Africa and India to share traditional Caribbean cuisines for the home.

You’ll work hands-on making Callaloo with Seafood and Provisions, a West Indian favorite. Learn why its name means “Mix-up” and what special ingredients and spices make up this tasty stewed gumbo.

With a philosophy steeped in cultural anthropology, Chef Curtis maps the origins and migration of these traditional ingredients and materials,  and shows how they are used to create this distinct Trinidadian comfort food.
