Kimchee is the hottest new thing in American cuisine. Popularized as accompaniment to Korean BBQ, seen on Buford Highway, and by celebrity chefs like David Chang of PBS/Netflix streaming series “Mind of a Chef”, “Kimchee” equals “Korean.” Superfood and mainstay of Korean cuisine, Kimchee has been made for centuries to preserve freshly-harvested produce. There are as many variations of kimchee as households in Korea.

Lacto-fermentation turns raw vegetables into pro-biotic and pre-biotic foods. Processing food in this way increases shelf-life and sometimes even enhances the nutritional value of foods. Lacto-fermented foods like kimchee are excellent for premium gut health, blood sugar regulation, and weight loss. And they are delicious!

In this introductory class, you will learn how to bring this healthful and tasty food into your home. You will familiarize yourself with the varieties of kimchee and their flavors through an instructive tasting. Then the instructor will walk you through the steps to demystify the kimchee-making process.

After the class, you will you know how to make the most famous Korean pickle of all pickles – Baechu Kimchee (spicy cabbage kimchee) – as well as a mild and refreshing Dongchimi, Korean Winter Radish Water Kimchee.

Price includes class and materials to make and take home Spicy Cabbage and Radish-Water kimchee. You will also receive recipes to make kimchee and suggested uses to enjoy kimchee in many ways. Bring a friend or two to share the fun, and you will receive a discount!

BYOB – Chef Grace Kim of KimcheeGRITS suggests a dry white wine, pilsner beers, Korean makgeolli (a low gravity Traditional Rice wine), Hite (a mild Korean beer). For extra fun, bring soju, champagne, sparking water, and pear juice, and we will make Pear Mimosas or Soju Spritzers! For Korean beverage items, suggested shopping at H-Mart or Buford Highway Farmer’s Market.
