Curious about fermentation but not sure where to start? Head into Preserving Now's Learning Kitchen for a basic introduction to two fermented foods: sauerkraut and kimchi.
Food fermentation is food transformation. It’s food transformed by microbes, like bacteria and yeast. But somehow, you end up with more than you started out with: newly developed flavors as well as enhanced nutritional benefits!
We will talk through the recipes and basics about fermentation together. What makes them work, the good vs. the bad bacteria. Then we’ll dive in and work together to make a large batch of kimchi and sauerkraut, working together on each step.
When we are finished, each person will have a jar of sauerkraut and a jar of kimchi to bring home and ferment (with instructions!), as well as recipes to make the ferments again in the future.
