Join David DiCorpo in Preserving Now's Learning Kitchen to learn the ins and outs of pasta creation. Comfort and simplicity, quicker than store bought and easier than you think! Once you make your own, you’ll never buy pasta again. This sweeping class will feature one dough recipe turned on its ear. We will start with the basics of making this simple classic, and transform it by hand and by machine into a selection of easy, versatile dishes.
Various pasta shapes (even extruded types) will emerge and wait for our saucing creativity. We will also do one gluten-free batch and one with spinach we have dried in the oven. We'll also create a laminated papparadelle with fresh parsley and a roasted butternut squash ravioli with our own fresh filling.
We will use seasonal ingredients to bring together a fast tomato basil sauce then dive into a light creamy alfredo with a twist. We'll perk up the ravioli with a saged hazelnut brown butter. And depending on the farmers market the day before, we'll create a vegetable ragu.
