Sourdough 1 + 2

SOURDOUGH 1 + 2 is a 2 day in depth workshop covering all the techniques and principles of sourdough bread baking. Each session is 4 hrs. You may register for Saturday only for $75 or for both days for $135.

SOURDOUGH 1- What is fermentation, what is sourdough fermentation. How to build a starter, how to maintain a starter. How to save a starter and when to let one go. Mixing, and bulk ferment. We will taste loaves but won’t go into depth of final proof scoring and baking. That will be in ...

SOURDOUGH 2- light touches on what we learned about fermentation and mixing but will take bulk fermented dough and start straight with shaping and final proof. We will learn proper scoring techniques, talk more in depth about tools, and variations (ie olive bread, cheddar jalapeño etc) and talk more in depth about flour. Then we bake.
